Sauces

  • Tomatoes: Choose ripe, flavorful tomatoes. You can use fresh tomatoes or canned tomatoes depending on availability and preference.

  • Onion: Finely chop one medium-sized onion.

  • Garlic: Crush or mince a few cloves of garlic.

  • Olive oil: Use extra virgin olive oil for added flavor.

  • Herbs and spices: Common choices include basil, oregano, thyme, bay leaves, salt, and pepper.

  • Optional ingredients: You can add vegetables like bell peppers or carrots for additional flavor and texture.

  • If using fresh tomatoes, wash and blanch them in boiling Water for a minute or two. Then, transfer them to an ice bath to cool. Peel off the skins and remove the seeds

  • Chop the tomatoes into small pieces. If using canned tomatoes, drain them and roughly chop them.

  • Heat a large saucepan or pot over medium heat and add olive oil.

  • Add the chopped onions and garlic to the pot. Saute them until they become soft and translucent.

  • Add the chopped tomatoes to the pot and stir well.

  • Season with salt, pepper, and any desired herbs or spices. You can also add any optional vegetables at this stage.

  • Reduce the heat to low and simmer the sauce, uncovered, for about 1 to 2 hours. Stir occasionally to prevent sticking or burning. The sauce will thicken and the flavors will develop as it cooks.

  • If you prefer a smoother sauce, you can use an immersion blender or regular blender to puree the sauce once it has cooled slightly.

  • If the sauce is too thick, you can add a little water or broth to thin it out.

  • Taste the sauce and adjust the seasoning as needed. You can add more herbs, spices, salt, or pepper to enhance the flavor.

  • Let the sauce cool completely before transferring it to airtight containers or jars.

  • Refrigerate the sauce and use it Within a Week. Alternatively, you can freeze it for longer storage.
