Tomatoes: Choose ripe, flavorful tomatoes. You can use fresh tomatoes or canned tomatoes depending on availability and preference.
Onion: Finely chop one medium-sized onion.
Garlic: Crush or mince a few cloves of garlic.
Olive oil: Use extra virgin olive oil for added flavor.
Herbs and spices: Common choices include basil, oregano, thyme, bay leaves, salt, and pepper.
Optional ingredients: You can add vegetables like bell peppers or carrots for additional flavor and texture.
If using fresh tomatoes, wash and blanch them in boiling Water for a minute or two. Then, transfer them to an ice bath to cool. Peel off the skins and remove the seeds
Chop the tomatoes into small pieces. If using canned tomatoes, drain them and roughly chop them.
Heat a large saucepan or pot over medium heat and add olive oil.
Add the chopped onions and garlic to the pot. Saute them until they become soft and translucent.
Add the chopped tomatoes to the pot and stir well.
Season with salt, pepper, and any desired herbs or spices. You can also add any optional vegetables at this stage.
Reduce the heat to low and simmer the sauce, uncovered, for about 1 to 2 hours. Stir occasionally to prevent sticking or burning. The sauce will thicken and the flavors will develop as it cooks.
If you prefer a smoother sauce, you can use an immersion blender or regular blender to puree the sauce once it has cooled slightly.
If the sauce is too thick, you can add a little water or broth to thin it out.
Taste the sauce and adjust the seasoning as needed. You can add more herbs, spices, salt, or pepper to enhance the flavor.
Let the sauce cool completely before transferring it to airtight containers or jars.
Refrigerate the sauce and use it Within a Week. Alternatively, you can freeze it for longer storage.
